Peel and seed the cucumbers, cut in fine slices crosswise (no thicker than 5 mm).
Mix the slices with the salt and stand for app. 30 min, drain the liquid (if you like mix the juice into a yogurt as a nice refreshing drink).
Add the lime juice, garlic, chopped chilli, mix well and marinate for one to two hours before you serve, adjust seasoning (it might need some extra salt) and top with the freshly ground pepper.
Now, that is a nice and simple recipe you can't go wrong with and it puts a bit of life into the otherwise rather dull cucumbers.
You might like to use it as a starter or as a side dish with a fish dish or barbeque.
If you never had a Belgian-style Witbeer, that might be a good choice on a warm day. I recommend the New Zealand made Limburg Witbeer.
