Quakebake's Ginger Log recipe

Ingredients:

  • 200 g gingerbread (the Quakebake Yumlets work very well)
  • 300 ml fresh cream
  • Port Wine, Sherry, Brandy, Rum or Cognac (essentially your preference matters)

Garnish/decorate with:
  • chocolate chips or chocolate raisins
  • crystallized ginger pieces
  • and fresh fruit like oranges and/or kiwi fruit

Method:

Whip the cream not to stiff. Soak the gingerbread with the liquor of your choice, sandwiching two pieces together as you go and arrange the pairs on a longish plate in the shape of a log. Cover the log with the remaining whipped cream. Toss the ginger pieces and choc chips in a nice fashion on top and use some fresh fruit on the sides to make it look good and feel healthier :-)

Tips:

You can sweeten the whipped cream with about 1 tbsp. sugar and mix in some spices like ginger and cinnamon, a drop of fresh lemon juice and vanilla essence. If you like it devilish add some of the liquor, too. Want to give it even more bite? Chop some fresh mint leaves and toss on top or better still mix into the cream.
