Thai Carrot Salad Recipe


  • 4 large carrots, grated in the food processor (or use a mandoline)
  • 1 red capsicum, julienned
  • 1 bunch spring onions, julienned
  • 1 bunch coriander, chopped
  • 1 bunch mint, chopped
  • a handful of peanuts, dry fried and chopped
  • 1-2 tbsp toasted sesame seeds, garnish

Ingredients for the dressing:
  • 3 tbsp grapeseed oil
  • 1 tbsp rice vinegar
  • 2 tsp fish sauce


Put all the prepared ingredients for the salad in a large bowl. Pour over the dressing, resist making it too wet. Tip out onto a large flat plate and garnish with toasted sesame seeds. I call this a low fuss, high pleasure recipe :-)
